Instant Pot (or Crockpot!) Chicken Carnitas

Serving size: 2-3

Ingredients:

  • 2 tablespoons olive oil

  • 1 pound boneless and skinless chicken thighs

  • 1 tsp granulated garlic

  • 1 tsp cumin

  • 1/2 tsp salt, 1/2 tsp ground black pepper

  • 1 tsp chili powder

  • 1 large lime

  • 2 Tbsp brown sugar

  • 1/4 cup fresh cilantro

  • 1/4 cup chopped purple onion

Directions:

For Instant Pot:

  1. Place all ingredients except cilantro and purple onion into instant pot.

  2. Click “poultry” option (~15 minutes), seal lid and let instant pot work! After instant pot is done cooking, release ventilation and take off lid. Next, click “sauté” option and let chicken brown, stirring frequently with spatula for ~5 minutes. This heat will also allow for sauce to caramelize!

  3. After 5 minutes of sautéing (or when chicken is fully cooked), turn off instant pot and transfer chicken to cutting board.

  4. Use two forks to shred chicken and transfer to serving dish.

  5. Top with fresh cilantro and onion!

For Crockpot:

  1. Place all ingredients except cilantro and purple onion into crockpot.

  2. Set on high at let cook for 4 hours or until done.

  3. Remove chicken and transfer to cutting board.

  4. Use two forks to shred chicken and transfer to serving dish.

  5. Top with fresh cilantro and onion!

Note: This chicken is amazing in wraps or over rice (or both)! Serve with cheese, sour cream, guacamole, Blossoming Mommy And Baby Cuban Beans , lettuce, and salsa!
