Kid Approved Veggie Pizza

Serving Size: 4-6

Ingredients:

  • 9-10oz refrigerated pizza dough (organic or gluten free option preferred!)

  • 1/2 cup pesto sauce

  • 1 cup sliced mushrooms 

  • 3/4 cup sliced white onion 

  • 1 cup chopped cherry tomatoes 

  • 2 cups fresh spinach

  • 3 Tbsp olive oil

  • 3 garlic cloves (minced garlic)

  • 1 cup mozzarella cheese

  • 1/4 cup fresh basil leaves (chopped)

Directions

  1. Preheat oven to 375 degrees (or as directed on pizza dough package). If you have a pizza stone, place in oven to heat up with high temperature. If you don’t have a pizza stone, use a flat sheet baking pan and place in oven to warm up.

  2. Next, in a large fry pan, add olive oil. Heat on medium for 2 minutes, then add minced garlic. After garlic has softened (~2 minutes), add mushroom and onion. Sauté over medium heat until tender, stirring frequently with spatula (~ 5 minutes) then turn off heat and set aside.

  3. Next, on a floured surface, use rolling pin to roll out pizza dough to desired size.

  4. Use hot pads to remove pizza pan or baking sheet from oven.

  5. Next, gently lay pizza dough on pan.

  6. Bake the pizza crust only for 8 minutes. Then remove from oven.

  7. To dough add pesto sauce, using spoon to evenly spread, leaving ~2 cm of space between sauce and edge of pizza crust.

  8. Next, add onion and mushroom mixture, including oil on top of pesto.

  9. Evenly spread mozzarella cheese to top of mixture and return pizza to oven with toppings and bake for additional 10 minutes.

  10. Remove pizza from oven and top with fresh spinach, tomatoes, and basil.

  11. Place pizza back in oven for 2 additional minutes.
