Healthy French Toast Casserole
Serving Size: 4-6
6 slices organic wheat bread (may also use gluten free!)
1 cup almond milk
1/2 tsp vanilla extract
3 organic eggs
1/4 tsp cinnamon
1/3 cup organic maple syrup
1 cup raw oats
3 Tbsp coconut oil
2 Tbsp brown sugar
1/2 tsp cinnamon
1/4 tsp pink himalayan sea salt
1 Tbsp maple syrup
Spray 9 x 13 baking dish with nonstick spray and set aside.
Next, use hands to rip bread into bite-size pieces and place into baking dish.
To a medium sized bowl, add: milk, vanilla extract, eggs, cinnamon, and 1/3 cup maple syrup. Whisk with fork until well combined and pour evenly over bread.
Use hands to gently mix in liquid mixture so all bread is covered.
Cover dish with saran wrap and let set covered in the fridge for at least three hours or overnight. (This will make your French toast bake very creamy and delicious!)
After the bread has soaked for your allotted time, preheat oven to 350°.
Remove saran wrap.
In a medium sized bowl, add: oats, coconut oil, brown sugar, cinnamon, salt, and 1 Tbsp maple syrup.
Use hands to mix together and evenly sprinkle over bread.
Bake for 35 to 40 minutes or until golden brown.
Serve warm and top with fresh fruit, maple syrup, and possibly a dollop of Cool Whip :-)
Keep stored in fridge.
