Healthy Crockpot Scalloped Potatoes
Serving Size: 4-6
4 large russet potatoes
3 Tbsp freshly chopped leek
3 Tbsp olive oil
1 Tbsp granulated garlic powder
1/2 tsp kosher salt
1/2 tsp pepper
1/2 cup shredded mixed cheese
1/4 cup unsweetened almond milk
2 Tbsp organic cream cheese
1/2 Tbsp better than bullion chicken base
Plug crockpot in and set to high.
Wash potatoes and thinly slice. Set aside.
Next, to a medium sauce pan, add leeks, olive oil, garlic powder, salt, pepper, almond milk, cream cheese, and chicken base. Let simmer on medium to low heat until all ingredients are mixed and melted together.
Spray crockpot with nonstick spray and evenly layer potatoes into pot.
Next, pour milk mixture over potatoes, using spatula to ensure each potato is covered with mixture.
Top with mixed cheddar cheese.
Cover and forget!!
Cook for 4 hours or until potatoes are nice and soft
