Healthy Garlic Potato Home Fries
Serving Size: 4-6
4 large russet potatoes
1/2 cup olive oil
4 cloves garlic (minced)
1 tsp kosher salt
1 tsp pepper
½ tsp onion powder
¼ cup minced fresh parsley (Or 2 Tbsp dried parsley)
½ cup shredded Parmesan cheese or Mixed cheese
Rinse potatoes in cold water then transfer to cutting board.
Cut potatoes in half lengthwise, then slice into ½ inch thick slices. Continue process until all potatoes are sliced.
Fill large bowl up with cold water and place all potato slices into bowl. (This helps keep them firm!) Let potatoes soak in water for 30 minutes.
Preheat oven to 375.
Once done soaking, drain water and pat dry potatoes with paper towel.
Next, transfer potatoes to a dry bowl and add: olive oil, minced garlic, salt, pepper and, onion powder. Toss with spatula until potatoes are evenly coated.
Line baking sheet with parchment paper or foil and spray with non stick spray.
Transfer potatoes onto sheet and let bake for 25 minutes. Remove from oven and use spatula to flip potatoes so both sides are evenly baked.
Return sheet back to oven and let bake again for 25-30 minutes.
Remove from oven and turn oven now to high broil.
Top potatoes with fresh parsley and cheese.
Place in oven to broil in high for 2 minutes.
