Gluten Free Chocolate Banana Bread
Serving Size: ~6-8 pieces
2 large bananas
1/4 cup organic maple syrup
1 tsp vanilla extract
1/4 cup melted coconut oil
1 cup almond flour
2 tablespoons brown sugar
1/2 cup gluten free oats
1/2 cup peanut butter
2 Tbsp cocoa powder or chocolate protein powder
1 tsp baking soda
Pinch of salt
Preheat oven to 325 degrees
In medium bowl, mash banana with fork, then add: eggs, peanut butter, maple syrup, vanilla extract, and melted coconut oil. Mix with whisk until well blended.
In a separate bowl, combine: flour, brown sugar, cocoa or protein powder, oats, salt and baking soda.
Slowly add dry ingredients into wet, stirring frequently until well blended.
Spray standard bread loaf pan with non-stick spray, then pour batter in.
Bake for 45-55 minutes or until golden brown.
Let set for 20 minutes before serving.
