Kid's Veggie Loaded Quinoa Bites

Kids Veggie Loaded Quinoa Bites

Serving size: 8-10 quinoa bites

Ingredients:

  • 2 cup cooked quinoa

  • 3 eggs

  • 2 tbsp coconut oil

  • 1/4 cup chopped onion

  • 1/4 cup chopped broccoli

  • 1/4 cup chopped zucchini

  • 1/2 cup shredded cheddar or mixed cheese

  • 1 tsp kosher or pink himalayan sea salt

  • 1 tbsp dijon mustard

  • 1 tbsp all purpose seasoning

  • 1/4 tsp pepper

  • 1 tsp granulated garlic powder

Directions:

  1. Preheat oven to 350 degrees.

  2. Next, using large frying pan, turn heat to medium and add coconut oil. Once oil has melted add: onion, broccoli, and zucchini. Add salt and pepper, as well as garlic powder and sauté over medium heat until tender or until onions are translucent in color.

  3. Remove vegetable mixture from heat and transfer all veggies into a large mixing bowl, adding: quinoa, 2 raw eggs, cheddar cheese, salt, mustard, all purpose seasoning, pepper, and garlic powder.

  4. Use large spatula to mix ingredients together.

  5. Once evenly combined, use hands to form one inch balls then place evenly on greased baking pan (use non-stickspray!) Lastly, use your palm or the back of a spoon to “smash” quinoa bites so they are flat.

  6. Repeat process until all mixture has been used.

  7. Bake for 35-40 minutes!

  8. These bites are great dipped in mustard, liquid aminos, soy sauce, ranch, or your children’s favorite dipping sauce! Keep quinoa bites stored in airtight container in refrigerator.
