Fall Harvest Salad
Serving Size: 4
6 cups raw spinach (rinsed and dried)
½ cup sliced red onion
1 cup sliced green or red apple (brand of choice)
½ cup raw walnuts
½ cup dried cranberries
½ cup sliced cucumbers
½ cup extra virgin olive oil
¼ cup balsamic dressing
2 Tbsp dijon mustard
¼ tsp kosher or pink himalyan sea salt
¼ tsp pepper
¼ tsp liquid aminos
¼ tsp granulated garlic powder
In a large salad bowl, add spinach.
To spinach, add: red onion, apples, walnuts, cranberries, and cucumbers.
In a small mixing bowl, combine all ingredients for balsamic dressing. Whisk with a fork then pour over salad.
Toss and serve immediately!
