Ground Beef (or Turkey!) Stuffed Peppers

  • 4 large green bell peppers (can use different color of bell peppers if desired) 

  • 1 cup cooked brown rice {prepared in advance}

  • 1 15 oz can diced tomatoes 

  • 1 15 oz can black beans 

  • 1/2 cup chopped white onion 

  • 1/2 cup chopped white mushroom 

  • 1/4 cup chopped green onion 

  • 1 lb ground beef or ground turkey 

  • 3/4 cup shredded cheese

  • 2 tbsp liquid aminos or soy sauce

  • 4 minced garlic cloves 

  • 1 Tbsp cumin 

  • 1 Tbsp chili powder 

  • 1 tsp onion powder

  • 1 Tbsp brown sugar 

  • Salt + pepper to taste 

  • Olive oil for drizzle 


  1. Preheat oven to 350 degrees

  2. Fill large boiling pot 3/4 full with water and add pinch of salt

  3. Meanwhile, cut stems off green peppers, slice peppers in half lengthwise, and remove seeds and white insides

  4. Place peppers into boiling water and let boil for 20 minutes (this softens your peppers!)

  5. After peppers are done, remove from water and let dry.

  6. Line baking sheet with foil or parchment paper and spray with non stick spray. Evenly place peppers on sheet then set aside.

  7. Next, drizzle ~1 tbsp olive oil into large frying pan and add minced garlic. Let sauté for 3 minutes, then add meat. Add salt + pepper to meat then cook until done.

  8. Remove meat from frying pan and add onion, mushrooms, and green onion next. Use undrained grease from meat to sauté. Once vegetables are tender, add back meat and all spices; as well as liquid aminos. Over medium heat, continue to simmer cook for 2 minutes, then add tomatoes, undrained black beans and rice.

  9. Fill peppers full with mixture, then top with cheese.

  10. Bake uncovered for 10-15 minutes or until cheese is bubbly.
