Healthy Christmas Morning Cinnamon Roll Bake


 Serving size: 9 pieces


Oatmeal Bake:

  • 4 cups gluten free oats

  • 2 eggs

  • 1/2 cup melted coconut oil

  • 2 tsp vanilla extract

  • 1/2 cup maple syrup

  • 2 tsp pumpkin pie spice

  • 2 tsp cinnamon

  • 4 Tbsp brown sugar

  • 1 cup almond milk

  • 2 tsp baking soda

  • Pinch of pink himalayan sea salt


  • 1/2 cup vanilla yogurt

  • 2 Tbsp brown sugar

  • 4 Tbsp coconut oil


  1. Preheat oven to 350 degrees.

  2. For Bake: Place all ingredients into high powered blender or kitchenaid. Pulse then blend on high until all ingredients are combined  (~30 seconds).

  3. Spray 9x13 with non-stick spray and pour batter in.

  4. Bake for 35-40 minutes

  5. For Frosting: Spoon vanilla yogurt into ziploc bag and set aside. In small microwave safe bowl, combine brown sugar and oil then pop in microwave for 10 seconds or until oil has melted. Stir with spoon and pour sugar/oil mixture into separate ziploc bag. Trim off x1 corner of each ziploc bag (this will serve as your pipping!).

  6. Let oatmeal bake cool for 5-10 minutes, then using piping, alternate both frosting and sugar on top of bake. Because the oatmeal bake has yogurt as icing, you will need to store this recipe in your refrigerator!
