No Bake Pumpkin Energy Balls
1/3 cup pumpkin purée
1 cup gluten free oats
1/4 cup almond flour
1/2 cup peanut butter
3 Tbsp maple syrup or honey
1/2 tsp cinnamon
1/4 tsp pumpkin pie spice
1/2 tsp vanilla extract
1/4 cup white chocolate chips
1/4 cup dried cranberries
1/4 cup chopped walnuts (optional)
Place all ingredients into large bowl.
Mix with spatula for 30 seconds, then with hands to ensure all ingredients are well blended.
Roll into 1-inch balls.
Place balls into airtight container and let “set” for 20-30 minutes before serving.
Enjoy and continue to store energy balls in airtight container!
