Healthy Memorial Day Weekend Recipe: Avocado + Tomato + Corn Salad

In honor of Memorial Day weekend, we're kicking off the "unofficial start to summer" with an absolutely GORGEOUS meal! The Blossom To Be Fit Avocado + Tomato + Corn salad is delicious on its own and can also be used as a great side dish to any summer meal. Packed full of nutrients, omegas, healthy fats, and more.... your tastebuds and body will be thanking you!
AVOCADO TOMATO CORN SALAD
-2 large avocados (diced)
-2 large tomato (diced)
-1/2 purple (or white) onion (diced)
-4 (husked) corn on the cob
-1 bunch fresh basil leaves (chopped)
-1/4 cup olive oil -1/8 cup red wine vinegar
-1/2 tsp granulated garlic
-Pink Himalayan sea salt + ground pepper (to taste!)
In a large bowl, combine: avocados, tomatoes, onion, and basil.
Next... START YOUR GRILL! Yep, we're grilling, sister! On medium heat, spray down your grill with non-stick spray. As your grill is warming up, gently lather your 5 corn on the cob(s) with coconut oil and salt/pepper to taste. Place corn on grill (approx 3-5 minutes on each side or until you have a nice grill to both sides).
Remove corn from grill and let cool. Once cooled, take knife and cut corn kernels off of the cob and pour into the tomato/avocado mixture.
Drizzle mixture with fresh olive oil, vinegar, garlic, and salt/pepper to taste. Toss gently. Cover and let set for 1 hour in your fridge so all of the flavors marinate well together.
