Lightened Up Twice Baked Sweet Potatoes

Serving size: 4 servings

Ingredients: 

  • 4 large white sweet potatoes 

  • ½ cup unsweetened almond milk 

  • 2 tbsp sour cream 

  • 1 cup cheddar or mixed cheese 

  • 1 tbsp organic butter 

  • ½ tsp granulated garlic powder 

  • ½ tsp dried parsley 

  • ½ tsp pink himalyan or kosher salt 

  • ½ tsp pepper 

Directions:

  1. Preheat oven to 350 degrees. 

  2. Rinse potatoes and poke each potato ~10x with a fork. 

  3. Next, bake potatoes for 40-45 minutes or until done. 

  4. Let potatoes cool for 10 minutes, the cut in half lenghtwise. 

  5. Spoon ¾ of insides out, leaving ¼ of a border on potato skins. 

  6. Spoon mixture into large mixing bowl or kitchen aid and add remaining ingredients. 

  7. Mix on medium speed for 30-45 seconds, then spoon evenly back into potato skins. 

  8. Top with additional cheese and return to oven to bake for 10 minutes or until cheese is bubbling.
