Gluten Free Marshmallow Brownies

 Serving size: 9-12 brownies (depending on your cuts :) )

Ingredients: 

  • 2 eggs

  • ½ cup melted coconut oil

  • ½ cup nut butter of choice

  • ½  cup maple syrup

  • 1 tsp vanilla extract

  • ½ cup almond flour

  • 2 Tbsp coconut flour

  • 3 Tbsp cocoa powder

  • ½ tsp baking soda

  • ½ tsp baking powder

  • ¼ tsp salt

  • ½ cup organic chocolate chips

  • ½ cup dairy free marshmallows

Directions: 

  1. Preheat oven to 350 degrees

  2. In a large bowl combine: eggs, melted coconut oil, nut butter, maple syrup, and vanilla extract. Mix on low-medium speed for 20-30 seconds or until well blended.

  3. Next, in a separate bowl, add: almond flour, coconut flour, cocoa powder, baking soda, baking powder, and salt. Stir with spoon then gently pour dry ingredients into wet ingredients, mixing on medium speed until well blended.

  4. Next, grease 9x13 baking dish with non-stick spray and pour batter into dish.

  5. Top batter with chocolate chips and marshmallows!

  6. Bake uncovered for 30-35 minutes or until done!
