Tuna Cucumber Bites {Healthy After School Snack!}

Serving size:10-12 slices. 

Ingredients: 

  • 1 large cucumber

  • 1/2 cup chopped red, yellow, or orange bell pepper

  • 1/4 cup chopped white or purple onion

  • 1/4 cup chopped celery

  • 6 oz tuna

  • 1/2 cup organic mayonnaise

  • 1/4 tsp dried dill weed

  • 1 tbsp organic yellow mustard

  • Salt + Pepper to taste

  • 1/4 tsp granulated garlic

Directions: 

  1. Wash cucumber and cut entire cucumber into 1/4 inch thick slices.

  2. Meanwhile, in large glass bowl, combine the following: bell pepper, onion, celery, tuna, mayonnaise, dill, mustard, salt + pepper, and garlic. Mix with spoon and set aside.

  3. Let tuna mixture set for 30 minutes for best flavor.

  4. Spoon tuna mixture evenly onto cucumbers!

  5. Serve immediately.

  6. Store in airtight container in refrigerator.
