Teriyaki Chicken Cauliflower Rice Bowl

Serving size:4-6 servings. 

Ingredients: 

For “rice”: 

  • 1 head large cauliflower

  • 2 tbsp olive oil

  • 1/2 tsp granulated garlic

  • Salt and Pepper to taste

For Chicken: 

  • 3 large chicken breasts

  • 2 tbsp olive oil

  • 1/2 tsp granulated garlic

  • Salt and Pepper to taste

  • 1 small white onion

  • 1 cup mushrooms

  • 2 yellow or green zucchini

  • 2 small bok choy

  • 1 tbsp sesame oil

  • 1x 15-20oz bottle of your favorite (Preferably organic) Teriyaki sauce *Yep! We’re cheating! This meal is quick and easy and there are some nights where an organic, pre-made sauce will do the trick!*

 

Directions: 

  1. Preheat ove to 350 and bake chicken breasts (approximately 35-45 minutes or until done). 

    1. Add additional olive oil (drizzled) and salt/pepper/granulated garlic for light coating and a nice touch of flavor.

  2. Using large stir-fry pan, heat olive oil and granulated garlic on low heat.

  3. Next, cut cauliflower into bite size pieces, then place into food processor or high powered blender, pulsing, then blending on medium until cauliflower resembles “rice”. Note- you’ll want to do this in 1 cup increments.

  4. Place “rice” onto layers of paper towels and repeat process until all cauliflower has been turned into “rice”.

  5. After all of your riced cauliflower has been transported to paper towels, place one more paper towel layer on TOP of cauliflower and press down on mixture to extract any extra liquids.

  6. Now, slowly transfer all of riced cauliflower to hot oil. Add salt and pepper to taste and “fry” for 5-7 minutes.

  7. Transfer “rice” to bowl and set aside.

  8. Next, add additional 2 tbsp olive oil, sesame oil, and additional 1/2 tsp granulate garlic to frying pan.

  9. Dice ALL vegetables (onion, mushrooms, zucchini, bok choy) and sauté for 10 minutes or until translucent or clear in color.

  10. Once vegetables have cooked, add entire bottle of teriyaki sauce. When chicken is done, cube and add to vegetable sauce mixture.

  11. Serve over cauliflower rice.
