SKINNY Confetti Doughnuts {Gluten free!}

Serving size: 6-8 per serving. 

Ingredients: 

  • 1 15 oz can organic cannelloni white beans

  • 1/2 cup maple syrup

  • 1 cup almond flour

  • 3 tbsp melted coconut oil

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • 1 egg

  • 3 Tbsp sprinkles

  • Doughnut pan*affiliate*

Directions: 

  1. Preheat oven to 350 degrees.

  2. Drain and rinse cannelloni beans.

  3. In a high powered blender or kitchen aid, add: beans, maple syrup, almond flour, coconut oil, coconut flour, vanilla extract, baking soda, and eggs.

  4. Pulse, then blend on medium/high for 45 seconds or until batter is smooth and well blended.

  5. Gently pour in sprinkles, pulsing 3-5 times.

  6. Next, spray doughnut pan with non-stick spray and evenly fill batter into each mold.

  7. If desired, sprinkle additional sprinkles on top of batter.

  8. Bake for 25-35 minutes or until done.
