Rainbow Vegetable Pinwills! (Kid’s FAVORITES!)



  • 1 gluten free tortilla

  • 1/2 cup hummus

  • 1/2 cup sliced purple cabbage

  • 1/2 cup sliced spinach

  • 1/2 cup sliced carrots (use cheese grater or spiralizer to do this!)

  • 1/4 cup sliced bell pepper (color of choice)

  • 1/4 cup sliced cucumber

  • 1/4 cup sliced tomato


  1. Lather hummus evenly in center of tortilla.

  2. Next, evenly layer vegetables into rows on top of hummus.

  3. Tightly roll tortilla from one side to the other, then cover with saran wrap.

  4. Place in fridge for 1 hour, then slice into pinwheels!
