Quick & Healthy Greek Spinach Salad

Ingredients: 

  • 10 cups spinach

  • 1 large tomato

  • 1 large cucumber

  • 1/4 medium white onion

  • 1/2 cup sliced olives of choice (kalamati, green, or black go best!)

  • 1/2 cup thinly sliced celery

  • 1/2 cup white cheese (feta or mozzarella)

  • 1/2 cup fresh croutons

  • Greek Salad dressing (feel free to homemake this… OR just get an organic dressing from the store, which is what I did!)

Directions: 

  1. Rinse and wash all vegetables.

  2. In large salad bowl, place spinach.

  3. Slice cucumbers, onions, and tomatoes, then add to spinach.

  4. Next, add onions, celery, cheese, and croutons to mix.

  5. Add dressing to salad, toss and enjoy!
