1 15 oz can organic garbanzo beans (rinsed and drained)
4 tablespoons melted coconut oil
3/4 cup almond butter (or nut butter of choice)
1/4 cup organic maple syrup
1/8 cup ground flaxseed
1 tablespoon vanilla extract
1/4 c almond flour
1/2 cup raw oats
1 tablespoon baking powder
3/4 cup organic chocolate chips or cocoa nibs
1/2 cup organic, raw coconut flakes *optional
Pinch of salt
Place garbanzo beans, coconut oil, almond butter, maple syrup, vanilla extract, and eggs in a kitchen aid or high powered blender. Mix on medium speed until well blended. Set aside.
In a separate bowl, combine flaxseed, almond flour, raw oats, salt, coconut flakes (optional) and baking soda. Mix with a wooden spoon, then gently pour into wet ingredient mixture. Mix on medium speed then add chocolate chips. Set dough aside.
Preheat oven to 350
Line baking sheet with parchment paper and scoop 1-inch dough balls (un-greased) onto baking sheet.
Bake at 350 for 12-15 minutes.
Serve with a fresh glass of almond milk or non-dairy ice-cream!
