Homemade Fresh Veggie Spring Rolls (#bmabstyle)

SAY HELLLLLLO TO YOUR NEW BEST FRIEND!!!! AHHHH! You guys. I am SO excited to share this recipe with you! It is LITERALLY so easy to make and SO CHEAP! No more spending $10 for a small pack of spring rolls... NOW YOU CAN make them straight from home and fill em' up with your FAVE ingredients!

So light. So refreshing. So easy on the waistline. ANDDDD in signature #blossomingmommyandbaby style.... oh so healthy. 

ENJOY Your Homemade Fresh Veggie Spring Rolls (#bmabstyle) BELOW!

Ingredients: 

  • 2 large cucumbers (peeled, julienned *this is a style of slicing! Look here for more details! )

  • 2 large carrots (julienned)

  • 1 large avocado (julienne)

  • 1 bundle of cilantro

  • 1 package cooked gluten free pasta

  • 1 head of fresh romaine

  • Spring roll rice paper (*affiliate link)

Directions: 

  1. Fill wide, deep pan with ~1 cup of water.

  2. Place 1 spring roll paper in water (completely immersed, flat laying) and let soak ~3 minutes until completely transparent and sticky!

  3. Remove rice paper from water and place on cutting board.

  4. Gently layer cucumbers, carrots, avocado, cilantro, pasta, and romaine. Feel free to adjust the portions to your liking!

  5. Now, it's time to roll! Gently roll and tuck your wrap, folding in each side (just like you would a burrito!)

  6. Once done rolling, place aside and let "set" for 10 minutes.

  7. Cut in half (or leave whole!) and serve with either fresh peanut sauce or chili sauce!
