Hearty Sausage, Kale and Potato Soup

Ingredients: 

  • 32 oz + 2 cups chicken broth

  • 1 cup unsweetened almond milk

  • 1 Tbsp olive oil

  • 3 cloves garlic

  • 2 large carrots (diced)

  • 1/2 large onion (dice)

  • 1 10 oz back frozen organic kale

  • 1 cup sliced mushrooms

  • 1/2 cup chopped peppers

  • 1 package sausage of choice

  • 2 large russet potatoes (cubed)

  • 1 large yellow or green zucchini (diced)

  • 1/2 cup uncooked pearl couscous

  • 2 Tbsp Better Than Bouillon Roasted Chicken Base

  • 3 tbsp Italian seasoning

  • 3 tbsp Trader Joes Seasoning Salute (or multi-seasoning spice similar!)

  • Sea Salt + Pepper to taste

Directions: 

  1. Brown sausage over medium heat. Drain grease and set aside.

  2. Place all ingredients except for couscous and kale into crockpot.

  3. Place crockpot on medium and let slow cook for 5 hours.

  4. Add uncooked couscous and kale to crockpot and cook soup on high for additional 1 hour.

  5. Remove from heat, serve with fresh bread and a salad! SO EASY :-)
