Healthy Tater Tot Casserole {A Blossom Family Favorite!}


Serving size:6-8 servings. 


  • 1lb ground beef

  • 2 tbsp olive oil

  • 1/2 medium white onion

  • 1 bell pepper (color of choice)

  • 1/2 cup mushrooms

  • 3 Tbsp tomato paste + 1 Tbsp water

  • 1 15 oz can organic diced tomatoes

  • 1/2 cup organic ketchup

  • 1 tbsp liquid aminos

  • 1 tsp granulated garlic powder

  • 1 cup shredded cheddar or mixed cheese

  • 1 tsp chili powder

  • 1 tsp cumin


    1. Preheat oven to 350 degrees

    2. Meanwhile, on stove top, grease large frying pan with olive oil and ground beef. Brown burger on medium heat, until done. Set aside. DO NOT DRAIN. 

    3. Dice the following vegetables: onions, bell pepper, mushrooms.

    4. Using same pan and juices from burger, add: all vegetables, garlic powder, chili powder, cumin, and maple syrup. Sauté on medium, stirring frequently until vegetables are tender. Once done, add meat back to mixture.

    5. Next, add tomato paste and water, diced tomatoes, ketchup, and liquid aminos to mixture. Bring to boil, then let simmer for 20 minutes.

    6. Spray 9×13 pan with non-stick spray and pour 1 cup of tater tots on bottom, the add meat mixture.

    7. Evenly spread cheese on top.

    8. Top with remaining tater tots.

    9. Bake uncovered at 350 for 45-50 minutes or until tatertots are crisp.

    10. Let set 10 minutes before serving.
