Healthy Strawberry Shortcake Powerballs!


  • 1/2 cup raw cashews

  • 1/4 cup nut butter of choice (peanut or almond butter work great!)

  • 1 cup freeze dried strawberries 

  • 1/4 cup almond flour

  • 1/2 cup raw oats

  • 3 tbsp coconut oil

  • 1/4 cup honey

  • 5x medjool dates 

  • pinch of salt

  • 1/2 tsp vanilla extract


  1. In a food processor or high power blender, combine: raw cashews, nut butter, almond flour, oats, coconut oil, honey dates, salt, and vanilla extract. Make sure your dates are pitted. Pulse for 1 minute, then blend on low speed until all ingredients are well blended (approximately 30-40 seconds).

  2. Use spatula as needed to scrape batter off edges while blending.

  3. Next, add freeze dried strawberries to mixture. Pulse for 20 seconds until strawberries are well blended and mixed.

  4. Roll into 1 inch balls and let chill for at least 30 minutes.

  5. Keep stored in air tight container.
