HEALTHY Make-Ahead Freezer (Fajita!) Meal

Freezer Meals are an absolute must for anytime of year! Why? They're easy, convenient, tasty, and make busy nights a BREEZE! Below you'll find some of my top freezer meal tips for your ladies and of course, our Blossom Family signature recipe for making Freezer Fajitas! Top 5 Make Ahead Freezer Meal Tips (Must-DOS!) 

  1. When using meats and vegetables, always freezer the meat separate (if it is raw). It is encouraged that you use the same marinate, but for peace of mind and contamination safety, always freeze apart! When you're ready to cook via crockpot or stove top, mix away!

  2. Best Freezer Meals: Soups, Stir-fry, Casseroles, and Sauces! On that note, try to stay clear of freezing potatoes and rice. These two items can be added once you have pulled out your meal from the freezer.

  3. For Freezing, Use: Large gallon ziploc bags or foil baking pans!

  4. Get the most bang for your buck! Buy in bulk or when items are on sale! When you freeze them, they won't go bad :)

  5. Double batch your recipes: This is great for enjoying the same me later down the road!

Freezer Fajitas Recipe

Ingredients: 

  • 2 large chicken breast or 2 large steaks.

  • 1/2 cup chicken broth

  • 2 cloves garlic (minced)

  • 1 bell pepper (sliced) (TIP: I like to mix and match colors! Think 1/2 green bell pepper, 1/2 red, etc!)

  • 1/2 large white onion (chopped)

  • 3 stalks (chopped) green onion

  • 1 cup mushrooms (chopped)

  • Seasoning: 1 packet of organic fajita seasoning OR: 1 Tbsp cumin, 3 Tsp chili powder, 1 Tsp turmeric, 1 Tbsp taco seasoning. Salt + Pepper to taste.

  • 2 Tbsp olive oil

Directions: 

  1. Cook chicken/steak in oven until well done. (I cooked ours at 350 degrees for 25 minutes with salt, pepper, and garlic powder).

  2. In a medium sauce pan, heat olive oil and add garlic. Sauté for 3 minutes on medium heat, then add: remaining vegetables, spices, and chicken broth. Cook on medium until well done.

  3. Once chicken/steak is done, remove from oven, slice into thin pieces, and add to veggie marinade.

  4. Let simmer on low for 30 minutes. Then remove from heat.

  5. Because the meat is cooked, you are safe to freeze the meat and vegetables together!

  6. Once the dish has cooled, transfer to ziploc gallon bags, label with food title and date, and store FLAT in your freezer.

  7. When you're ready to eat, simply remove from the freezer and heat dish up in crockpot or on stove top!

  8. Serve with: tortillas, fresh guac, sour cream, salsa, cilantro, rice, and limes!
