Healthy Homemade Lasagna (Gluten Free Option) 


  • 1/2 onion (chopped)

  • 1 cup mushrooms (chopped)

  • 1 medium sized zucchini (chopped)

  • 1/2 cup carrots (chopped)

  • 1 bell pepper *color of choice (chopped)

  • 2 cloves garlic (minced)

  • 2 lbs ground meat of choice (burger, turkey burger, elk burger, moose burger, caribou burger)

  • 1 15oz can diced tomatoes

  • 1 24 oz jar marinara sauce of choice

  • 1 package organic, gluten free lasagna noodles (replace with regular noodles if GF option not available)

  • 1 16 oz package of ricotta cheese

  • 1 cup shredded mozzarella cheese

  • 1 cup shredded cheddar cheese

  • 1 T Italian Seasoning

  • 1 T parsley (dried)

  • 1/2 T oregano

  • 4 bay leaves

  • 1 tsp red pepper flakes

  • 1 tsp organic maple syrup (or honey)

  • Salt + Pepper to taste

  • 1 egg


  1. Cook lasagna noodles according to package and set aside.

  2. Preheat oven to 375 degrees.

  3. In a large frying pan, add olive oil and heat for 2 minutes.

  4. Next, add all vegetables including: onion, mushrooms, zucchini, carrots, bell peppers, and garlic to olive oil. Sauté on medium head, staring frequently until vegetables are tender. Transfer to separate bowl.

  5. In same frying pan, add meat. Brown meat on medium heat, grounded with spatula. Add additional garlic if desired and salt/pepper to taste.

  6. Once meat is done, drain excess fat and transfer vegetables back to frying pan with meat mixture.

  7. Add marina sauce, diced tomatoes, all spices, and syrup/honey. Mix and add 1/4 cup of water if desired consistency thinner. Bring mixture to boil, then simmer for 30 minutes.

  8. Meanwhile, in a separate bowl, combine ricotta cheese, 1 egg, additional parsley (~1/2 tsp), and salt/pepper. Mix and set aside.

  9. Finally, with non-stick spray, grease 9x13 baking dish. Layer: Sauce, Ricotta Cheese, Noodles, Motz/Cheddar cheese. Repeat until all ingredients used. Top with Sauce and cheese.

  10. Bake covered with tin-foil for 30 minutes, then remove tin-foil and let cook for remaining 10 minutes.

  11. Let set for 20-30 minutes and enjoy!
