Healthy Crockpot Pumpkin Chili 

Ingredients: 

  • 1 small butternut squash (cubed)

  • 1 cup sweet potatoes (cubed, raw)

  • 1 cup carrots (chopped)

  • 1/2 white onion (chopped)

  • 1/2 cup white mushrooms (chopped)

  • 1 cup canned pumpkin puree

  • 3/4 cup bell pepper (chopped- color of your choice!)

  • 1 15 oz can kidney beans

  • 1 15 oz can black beans

  • 1 15 oz can white beans

  • 1 15 oz can diced tomatoes

  • 32 oz chicken broth

  • 1 can tomato sauce

  • 2 Tbsp Mexican seasoning

  • 1 Tbsp cumin

  • 1 Tbsp chili powder

  • 1 Tbsp granulated garlic

  • 1/2 tsp cinnamon

  • 2 Tbsp organic maple syrup

  • Salt and pepper to taste

Directions: 

  1. Lightly grease a crockpot with oil/butter and garlic.

  2. Next, add all ingredients, including vegetables, beans, liquids, and spices.

  3. Note, do not drain your bean! We'll use the juice!

  4. Set your crockpot on high for 6-7 hours.

  5. Serve with fresh bread, rice, and salad!
