Healthy Crockpot Gumbo (Cozy Fall Dish!)

Ingredients: 

  • 2 stalks celery

  • 3 large carrots

  • 1 med onion

  • 1 cup corn (frozen)

  • 1 bell pepper (green, yellow, red, or orange) (diced)

  • 2 cups frozen okra

  • 1 yellow zucchini (diced)

  • 1 green zucchini (diced)

  • 1 pound frozen shrimp

  • 1 pound turkey meatballs (homemade or store bought)

  • 2 14oz cans diced tomatoes

  • 6 cups hot water

  • 6 chicken bullion cubes

  • 1 T garlic powder

  • 2 T cajun seasoning

  • 1 tsp cayenne pepper

  • 2 cup brown rice

  • Salt + Pepper to taste

Directions: 

  1. In a medium pan, sauté shrimp over olive oil, garlic, salt and pepper. Remove from heat.

  2. Next, sauté up turkey meatballs until done. Remove from heat.

  3. In same pan, sauté in olive oil: celery, carrots, onion, corn, and zucchini. Season with garlic powder and salt/pepper.

  4. Turn crockpot on to medium heat. Pour all ingredients + spices in.

  5. Cook on medium for for 2-3 hours.
