Guiltless Gluten Free Chocolate Chip Oatmeal Cookies 

Ingredients: 

  • 1/4 cup apple sauce

  • 1/4 cup + 1 TBSP melted coconut oil

  • 1 egg

  • 1/2 cup peanut butter

  • 1/4 cup + 2 TBSP organic maple syrup

  • 2 cups gluten free oats

  • 3/4 cup chocolate chips

  • 1/2 tsp baking soda

  • 1 tsp vanilla extract

  • Pinch of salt

Directions: 

  1. Preheat oven to 350 degrees

  2. In high powered blender or kitchen aid, combine: apple sauce, coconut oil, egg, peanut butter, vanilla extract,and maple syrup. Blend/mix on medium speed until well blended.

  3. In a sperate bowl, combine: oats, baking soda, and salt. Mix slowly with spoon, then gently pour into wet mixture.

  4. Blend/mix on low-medium speed until well blended. Gently fold in chocolate chips.

  5. Scoop into 1-inch balls and place on greased cookie sheet.

  6. Bake for 12-15 minutes or until done.
