Gluten Free + SKINNY Peanut Butter Cup Brownies 

GLUTEN FREE + SKINNY Peanut Butter Cup Brownies

Ingredients:

For Brownies: 

  • 1 c almond flour

  • 1/4 Tbsp coconut flour

  • 2 Tbsp cocoa powder or chocolate protein powder

  • 1/4 c + 1 Tbsp  maple syrup

  • 2 eggs

  • 1/4 c coconut oil

  • 1 tsp vanilla extract

  • 1/4 c organic peanut butter

  • 1/4 c chocolate chips

  • 1/2 tsp baking soda

  • 1 tbsp brown sugar

  • Pinch of salt

Directions: 

  1. Preheat oven to 350 degrees.

  2. In medium size bowl, add: Almond flour, coconut flour, cocoa powder or protein powder, baking soda, brown sugar, and salt. Mix with spoon inside the side.

  3. Next, in KitchenAid or high power blender, add maple syrup, eggs, coconut oil, vanilla extract, and peanut butter. Mix on low, then high-speed for approximately 30 seconds or until well blended.

  4. Next, gently pour dry ingredients into wet, mixing on low until well blended.

  5. Gently fold in chocolate chips

  6. Spray muffin tin with nonstick spray. Muffin liners are not required. Gently scoop in batter to each individual muffin holder, filling approximately 3/4 of the way full.

  7. Bake for 18 minutes or until done

  8.  Let muffins cool completely.

For Glaze: 

  1. In microwave safe bowl, add 1/4 c chocolate chips (in addition to that required above), 1 Tbsp peanut butter, and 1 tsp coconut oil. Heat in microwave safe bowl for 30 seconds then stir with spoon until well blended. Gently drizzle over muffins.
