Gluten Free (Skinny!) Chewy GingerSnap Cookies 

Ingredients: 

  • 1 1/2 c almond flour

  • 1/2 c arrowroot powder

  • 1 egg

  • 1/4 c coconut oil

  • 1/4c + 3 T backstrap molasses

  • 1 T cinnamon

  • 1 T pumpkin pie spice

  • 1/4 c sugar in the raw

  • 1 T baking powder

  • Pinch of salt

Directions: 

  1. Place all ingredients into kitchen aid.

  2. Blend on medium, then high (dough will be sticky and wet!)

  3. Preheat oven to 350.

  4. Form 1-inch balls with cookie dough and place on greased cookie sheet.

  5. Bake for 10 minutes.
