Gluten Free Chocolate Peanut Butter Blossoms! (Christmas Cookie Swap!)
For Cookie Crust:
1/2 cup almond flour
1 cup organic peanut butter
2 Tablespoons melted coconut oil
1/2 cup sugar in the raw
1 Tablespoon vanilla extract
For Chocolate Filling:
1/4 cup organic chocolate chips
1/2 tablespoon coconut oil
Preheat oven to 350 degrees.
In medium bowl, mix: egg, peanut butter, melted coconut oil, and vanilla. Mix well with spoon, then slowly add in almond flour and sugar in the raw. Mix then set aside.
Roll dough into 1 inch balls, the use back of spoon to lightly pat down dough on greased baking sheet, using force to indent the middle of the cookie deeper than the outsides (this will be the “nest” for the chocolate to go after the cookie are done baking!)
Bake cookies (without chocolate) for 12-15 minutes or until golden brown. Remove from oven and let cool for 5 minutes before spooning chocolate mixture into cookies.
With 5 minutes left on timer, it’s time to get your chocolate mix ready!
In a microwave safe bowl, combine: chocolate chips and coconut oil. Place in microwave for 45 seconds, stirring with a spoon until well mixed.
Use spoon or pipet to transfer chocolate mixture into centers of cookies.
Let set for 30 minutes!
