Garlic-Balsamic Brussel Sprout Blend

Ingredients:

  • 3 cups shredded Brussel sprouts

  • 1/2 onion (thinly sliced)

  • 1 can garbanzo beans (rinsed and drained)

  • 1 cup mushrooms (sliced)

  • 3 T dried parsley

  • 1/4 c green onion

  • 1/2 c organic olive oil 

  • 1/4 c balsamic vinegar

  • 1 T granulate garlic

  • Pink Himalayan Sea Salt + Crush Black Pepper *To taste 

Directions: 

  1. In a large ziploc (gallon) bag, combine: Brussel sprouts, onion, garbanzo beans, mushrooms, parsley, green onion, olive oil, vinegar, and granulated garlic (as well as salt and pepper to taste)!

  2. Zip bag and shake until all ingredients are well blended.

  3. Let mixture marinate in bag for at least 1-2 hours.

  4. Preheat oven to 375.

  5. Spray parchment paper with non-stick spray, then add Brussels sprout mixture.

  6. Bake in oven for 25-30 minutes, or until golden brown, flipping halfway through! (*This ensures an even bake!)
