The EASIEST Chicken Detox Soup

Ingredients: 

  • 64 ounces water

  • 4 tablespoons organic chicken  It’s better than bouillon *affiliate

  • 2 cups shredded cooked chicken

  • 1 cup chopped carrots

  • 1 cup chopped celery

  • 1 cup chopped mushrooms

  • 2 cups chopped kale or spinach

  • 1/2 cup chopped white or yellow onion

  • 1/2 lemon (juice from)

  • 1/2 cup frozen peas

  • 2 cloves garlic (minced)

  • 2 tablespoon Italian Seasoning

  • 1 tablespoon dried basil

  • 1 teaspoon turmeric

  • 1 tablespoon All purpose seasoning (I use this one from Trader Joes! *affiliate*

  • 2 tablespoons coconut oil

  • Optional: 1 cup uncooked gluten free pasta 

  • Salt + Pepper to taste

Directions: 

  1. In a large stock pan, melt coconut oil and sauté garlic for 3-5 minutes on medium heat.

  2. Next, to the melted coconut oil and garlic, add: chopped carrots, celery, mushrooms, chopped kale, and onion. Season with salt and pepper, sautéing for 7-10 minutes on low-medium heat or until vegetables are soft.

  3. Next, add: water, broth, cooked chicken, lemon juice, peas, Italian seasoning, basil, turmeric, and all purpose seasoning. If adding pasta to recipe, DO NOT add it yet! Add additional salt or pepper if necessary.

  4. Place lid over pot and bring all ingredients to a boil for 8-10 minutes.

  5. Remove lid and reduce to simmer for 20 minutes.

  6. Add pasta (if desired) last 10 minutes, as this will ensure the pasta does not get mushy.

  7. Serve with salad and fresh bread.
