Clean Mac n’ Cheese!

Who doesn't LOVE  a big, creamy bowl of mac n' cheese?! :)

Am I right or am I right?!

Although mac n' cheese may be one of the all time LEGENDARY childhood favorites, it's a meal that is generally packed full of butter, milk, and flour... which will leave your digestive system saying "Girl... no more!"

Sister, we've got you. I perfected a homemade vegan-(ish) mac n' cheese dish that is both hubby and toddler approved. My secret? Butternut squash. I know.. crazy. (Don't tell your husband ;) ) Now, onto the recipe! I'm so excited for you to try this dish. Pair it with a big kale salad and some fresh garlic bread and GIRL, you'll be the mama of the night! ENJOY!


Clean Mac n' Cheese


-1 large butternut squash

-1 box whole wheat organic pasta

-2 tbsp coconut oil

-2 tbsp almond flour

-1/2 cup almond milk

-1 small onion

-2 garlic cloves (minced)


-1/4 cup cheddar cheese

-3/4 cup chicken broth


-Cut outside of squash off and scoop seeds out.

-Drizzle with olive oil and salt/pepper.

-Bake at 375 for 20-30 minutes or until tender.

- Meanwhile, melt coconut oil over stovetop and add minced garlic and onion. Cook over medium heat, until onions are transparent.

-Stir in almond flour and chicken broth and turn heat down to low.
-Remove squash from oven and dice.

-Gently pour squash pieces into food processor and add almond milk. Pulse, then blend on high until creamy. Once creamy, pour mixture into onion mixture.

-Stir well.

-Add in cheese and simmer on low.

-Serve with fresh organic pasta!
