Cilantro Lime Chicken Bowls

Serves 4


  • 3 cups cooked rice or quinoa  (I swear by a rice-cooker. Best investment ever + super affordable!) *affiliate*

  • 6 cups cooked chicken breast (shredded or cubed)

  • 2x 15 oz cans black beans (rinsed and drained)

  • 1 cup chopped tomatoes

  • 4 cups shredded romaine lettuce

  • 1/2 cup chopped white onion

  • 2 avocados (diced)

  • 1 15 oz can yellow corn (rinsed and drained)

  • 1 cup fresh cilantro leaves (washed and cut)

  • Toppings (measurement depends on your preference!)

    • Sour cream

    • Shredded cheese

    • Fresh limes (sliced)

    • Salsa

    • Liquid Aminos (healthy substitute for soy sauce) *affiliate* 


  1. Prepare rice and chicken in advance, seasoning as preferred. Feel free to season your chicken with taco/Mexican seasoning as this adds a fun and festive taste to the entree!

  2. Rinse and drain: black beans and corn. Set aside in two separate serving bowls.

  3. Next, wash, cut, and store each of the following ingredients into individual bowls: lettuce, onion, avocado, tomatoes and cilantro.

  4. Layer serving bowl with rice, chicken, and desired toppings. Serve with sour cream, cheese, salsa and fresh limes.
