(The BEST) Gluten Free SKINNY Berry Oat Bars!

Ingredients: 

  • 2 cups gluten free oats (I use these) *affiliate

  • 1/2 cup coconut flour

  • 2 tablespoon ground flaxseed

  • 2 tablespoon brown sugar

  • 1/2 cup coconut oil

  • pinch of salt

  • 1/4 cup honey

  • 1 tablespoon vanilla extract

  • 2 cups mixed frozen tri-berries

  • 1 tablespoon fresh lemon juice

  • (Additional) 2 tablespoon honey

  • 1 teaspoon cinnamon

  • 2 tablespoon apple sauce

Directions: 

  1. Preheat oven to 350 degrees

  2. In a food processor or high powered blender, combine: oats, coconut flour, brown sugar, flaxseed, 1/4 cup honey, coconut oil, and salt. Pulse for 30 seconds, then blend on medium-high speed until all ingredients are well combined.

  3. Grease a 9x13 pan with non-stick spray and press half of "dough" mixture onto bottom. Transfer remaining dough to a separate bowl and set aside (you will use this later!)

  4. Bake for 10-12 minutes, Remove from oven and let cool as you prepare berry mixture.

  5. Next, pour vanilla extract, berries, lemon juice, 2 tbsp honey, cinnamon, and apple sauce into food processor and pulse, then blend on low-medium for 10 seconds. Note: you want berries to still be "chunky" :-), not completely pureed.

  6. Spread berry mixture on top of cooked dough (your dough will still be warm, and that's okay!), then sprinkle remaining dough over top of berry mixture.

  7. Bake for additional 20-25 minutes.

  8. Serve with fresh yogurt or ice-cream
