Back To School Chili!

Ingredients: 

  • 1 package hamburger meat (we use moose meat! Feel free to also use Elk, turkey burger, or Caribou).

  • 1 small zucchini (diced)

  • 1 cup carrots (chopped)

  • 1/2 white onion (chopped)

  • 1/2 cup white mushrooms (chopped)

  • 1/2 cup canned green chilies

  • 3/4 cup bell pepper (chopped- color of your choice!)

  • 1 15 oz can kidney beans

  • 1 15 oz can black beans

  • 1 15 oz can diced tomatoes

  • 1/2 cup chicken broth

  • 1-2 Tbsp Mexican seasoning

  • 1 Tbsp cumin

  • 1 tsp chili powder

  • 1 Tbsp granulated garlic

  • Salt and pepper to taste

Directions: 

  1. Lightly grease a large pot with oil/butter and garlic.

  2. Add meat and brown until completely cooked.

  3. Next, add all vegetables and chicken broth. Sauté until soft, then add meat back in.

  4. Slowly add in remaining ingredients including beans and all spices.

  5. Bring to boil, then let simmer for 1 hour.

  6. Serve with chili toppings or serve over baked potatoes!
