2 large avocados (Diced)
2 large tomatoes (Diced)
1/2 cup chopped onion (Diced)
1/4 cup chopped cilantro
1 lime (squeezed juice)
1/2 tsp granulated garlic powder
1/4 cup olive oil
1/8 cup red wine vinegar
Salt + pepper to taste
In a large bowl, combine: avocado, tomatoes, onion, cilantro, and lime juice. Mix with spoon and set aside.
In a separate small bowl, combine: garlic powder, olive oil, vinegar, and salt/pepper. Whisk with fork, then pour over avocado mixture.
Stir mixture gently with spoon, then cover with Saran Wrap.
Let set in fridge for at least 1 hour before serving.
