Buffet Style Meatless Protein Bowls
Serving Size: 4-6 protein bowls
2 cups cooked quinoa
1 cup chopped cauliflower
1 cup chopped onion
4 cups (approximately 2 large) chopped sweet potatoes or yams
1 large yellow or green zucchini (or 2 medium sized zucchinis) (chopped)
4 Tbsp olive oil
2 Tbsp dijon mustard
1 tsp granulated garlic
1 tsp all purpose seasoning
1 Tbsp liquid aminos
1 tsp maple syrup
Salt + pepper to taste
Preheat oven to 425 degrees.
Line baking sheet with parchment paper or foil.
Next, place cauliflower, onion, sweet potatoes, and zucchini onto baking sheet.
In a small bowl, combine: olive oil, granulated garlic, liquid aminos, maple syrup, salt, pepper
Whisk with fork and then evenly pour over potato and vegetable mixture.
Bake for 35-45 minutes, flipping with spatula half way through.
When done, evenly spoon vegetables over quinoa and enjoy!
