Buffet Style Meatless Protein Bowls

Serving Size: 4-6 protein bowls

Ingredients:

  • 2 cups cooked quinoa

  • 1 cup chopped cauliflower  

  • 1 cup chopped onion

  • 4 cups (approximately 2 large) chopped sweet potatoes or yams

  • 1 large yellow or green zucchini (or 2 medium sized zucchinis) (chopped)

  • 4 Tbsp olive oil

  • 2 Tbsp dijon mustard

  • 1 tsp granulated garlic

  • 1 tsp all purpose seasoning

  • 1 Tbsp liquid aminos

  • 1 tsp maple syrup

  • Salt + pepper to taste

Directions:

  1. Preheat oven to 425 degrees.

  2. Line baking sheet with parchment paper or foil.

  3. Next, place cauliflower, onion, sweet potatoes, and  zucchini onto baking sheet.

  4. In a small bowl, combine: olive oil, granulated garlic, liquid aminos, maple syrup, salt, pepper

  5. Whisk with fork and then evenly pour over potato and vegetable mixture.

  6. Bake for 35-45 minutes, flipping with spatula half way through.

  7. When done, evenly spoon vegetables over quinoa and enjoy!
