Gluten Free Dark Chocolate Cherry Granola

 Serving size: ~3 cups of granola

Ingredients: 

  • 2 cups gluten-free oats 

  • 1/4 cup coconut oil 

  •  1/4 cup maple syrup 

  • 1/2 tsp vanilla extract 

  • 1/2 cup chopped almonds or nuts of choice

  • 1/4 cup dried coconut flakes

  • 1 cup dried cherries 

  • Pinch of salt 

  • 1/2 teaspoon cinnamon 

  • 1/2 cup chopped organic  chocolate bar 

Directions:

  1. Preheat oven to 325 degrees

  2. Line baking sheet with parchment paper and spray with nonstick spray

  3. In a microwave safe bowl combine coconut oil, maple syrup, and vanilla extract. Heat for 30 seconds or until melted.

  4. In a large bowl, combine: oats, nuts, coconut flakes, cherries, salt, and cinnamon. Stir with spoon then gently pour in oil mixture. Again, stir with spoon until well coated.

  5. Evenly pour mixture onto baking sheet and bake for 25-35 minutes or until oats are golden.

  6. While granola is baking, use knife to cut chunks of chocolate from chocolate bar. Let granola cool for 30 minutes, then add chocolate to mixture. 

  7. Store in airtight container or mason jars.
