Healthy Pumpkin Pancakes!

Serving size: 10-12 pancakes 


  • 2 cups gluten free oats

  • 1 cup almond flour

  • 2 tbsp melted coconut oil

  • 1 tsp cinnamon

  • 2 eggs

  • 3/4 cup almond milk

  • 1/4 cup pumpkin puree

  • 2 tbsp organic maple syrup

  • pinch of brown sugar

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • Pinch of salt


  1. Place all ingredients into high power blender. Pulse, then blend on high until batter like consistency (approximately 60 seconds).

  2. Preheat pancake griddle or frying pan to medium heat.

  3. Gently scoop batter out with 1/4 cup, frying for ~60 seconds on each side or until desired consistency is achieved!

  4. Serve with maple syrup or whip cream!
