The Easiest BLENDER Tomato Soup!
Serving Size: 4 servings
1 15oz can diced tomatoes
3 Tbsp tomato paste
1 1/2 cups water
1 Tbsp better than chicken bullion base
1/2 tsp granulated garlic powder
1 Tbsp brown sugar
1/4 cup chopped white onion
1/4 cup sliced white mushrooms
5 fresh basil leaves
1 tsp Italian seasoning
4 Tbsp organic cream or half and half
Salt and pepper to taste.
Spray frying pan with non-stick spray, then add mushrooms and onion. Sauté onions and mushrooms on stove top until tender and remove from heat.
To high powered blender or food processor, add all ingredients. Pulse, then blend on high for 90 seconds or until creamy.
Next, transfer soup to stovetop and turn heat to medium.
Stir frequently with spoon, bringing soup to boil.
Once soup is boiling, turn heat back down to low and let simmer for 10 minutes, stirring frequently.
Serve with fresh grilled cheese and a big salad!
