No Bake Pumpkin Energy Balls

Ingredients: 

  • 1/3 cup pumpkin purée

  • 1 cup gluten free oats

  • 1/4 cup almond flour

  • 1/2 cup peanut butter

  • 3 Tbsp maple syrup or honey

  • 1/2 tsp cinnamon

  • 1/4 tsp pumpkin pie spice

  • 1/2 tsp vanilla extract

  • 1/4 cup white chocolate chips

  • 1/4 cup dried cranberries

  • 1/4 cup chopped walnuts (optional)

Directions: 

  1. Place all ingredients into large bowl.

  2. Mix with spatula for 30 seconds, then with hands to ensure all ingredients are well blended.

  3. Roll into 1-inch balls.

  4. Place balls into airtight container and let “set” for 20-30  minutes before serving.

  5. Enjoy and continue to store energy balls in airtight container!
