Healthy Slow Cooked (Crockpot) Stuffed Apples!

Ingredients 

  • 4 honey crisp apples

  • 1 c gluten free oats

  • 1 c shredded coconut flakes (unsweetened)

  • 1/2 c raw almonds

  • 1 c organic raisins

  • 3 T coconut oil

  • 1/2 c organic maple syrup

  • 1/4 tsp organic vanilla extract

  • 1 T cinnamon

Directions 

  1. Wash apples.

  2. Using melon scooper, scoop out center of each apple (1/2 way down each apple).

  3. Place coconut oil in crockpot.

  4. Place x4 apples into crockpot.

  5. Sprinkle oats, coconut, almonds, raisins, maple syrup, vanilla, and cinnamon over apples.

  6. Cook on low for 4 hours.

Pairing Tip: This blend is delicious over non-dairy ice-cream (coconut or almond milk ice-cream) or fresh Greek yogurt!
